Idk about you guys, but the weather here today is nasty. Like frigid cold, snowing and icy. Not that I’m complaining. Any reason to bundle up like a human burrito is one I’ll take advantage of. Here’s my one issue with the fun little blizzard we’ve got going on. I’m running out of baking materials and I really have no interest on putting on REAL pants to go to the store….yet I really, really want something sweet. So what’s a girl to bake? Obviously a vanilla funfetti mug cake.

It’s perfect for those days where you want something delicious, sweet, and ready to eat in less than 5 minutes. Also, then you don’t have to worry about eating too much cake because it’s perfectly fine to eat this whole thing in one sitting.
Not to mention, if you’re trapped in a dorm room suffering through an all-night study sesh…girl, this mug cake is here for you. Trust me, I ate wayyyy too many of these things in college.
Useful Tools for a Funfetti Mug Cake
Egg Separator: Adding the eggs whites to this cake makes it weird. Weird consistency, texture, and flavor. Don’t do it. What you should do is get the cutest egg separator here. I have it and use it every chance I get! Who knew separating eggs could be so adorable?
A Sassy-Ass Mug: Everyone needs a good mug that lets people know that despite the cake you’re not always sweet as sugar.
And of course, a funfetti cake isn’t a thing without some classic rainbow sprinkles. Get them here if you don’t hoard sprinkles like me.
How to make your funfetti mug cake
Reason 527 why mug cakes are awesome: they take less than 5 minutes start to finish. So yeah, that’s including cook time.
All you need to do is melt your butter, separate your egg, and then mix everything into your favorite mug. Please make sure it’s a microwavable mug because I cannot be held liable for you setting your microwave on fire or your favorite mug exploding.
Once you’ve whisked everything together with a fork, microwave that bad boy for 2 minutes. At times (depending on the strength of the various microwaves I’ve used), it may need 2 minutes plus 30 seconds. The top of the cake should be set and not jiggly.
The top may still look wet but fear not. Let your cake sit for a couple minutes and that excess wetness will be no more.
I’m super lazy and typically only add more sprinkles or some powdered sugar to the top but I suppose you could make a quick glaze to go on top.
To do that, take 3 tablespoon of powdered sugar + 1.5 tsp of your choice of milk, add the powdered sugar to a small bowl and then the milk and whisk the sh*t out of it until it’s smooth. Drizzle it on your hot funfetti milk cake and bask in the amazingness.
Super simple glaze but again, most of the time when I’m hankering for a mug cake I want to eat it yesterday so there’s no way I’m taking more time to add more steps. 😂
Vanilla Funfetti Mug Cake
- 2 tbsp butter (melted, unsalted)
- 2 tbsp sugar
- 2 tbsp almond milk
- 4 tbsp all-purpose flour
- 1 large egg yolk
- 1 tbsp sprinkles
- 1 tsp baking powder
- 1 tsp vanilla
- Add all the ingredients into your favorite (microwave safe) mug and whisk them until combined with a fork.
- *Make sure you do NOT add the egg whites from your egg, only the yolk.*
- Cook in your microwave for 1 minute and 45 seconds. When it is done, the top will be set.
- Top with ice cream, whipped cream, powdered sugar, or more sprinkles and enjoy!
Mug cakes are miracle and a magical gift for when your lazy butt is craving some sweetness. And this funfetti mug cake is even better because not only is it delicious but it’s also colorful and cheery. As we already decided, this makes it extra great for a cold snowy day or a late miserable night studying O Chem.
