(Seriously though, why do we feel the need to give gifts to everyone, like, you can barely stand your coworkers and now your spending your time and money on them…what???)
Every year I opt for giving cookies. Why? Because for one thing I’m a food blogger and it just makes sense.
But it’s also an easy clutter-free, thoughtful, and special thing to receive while still being relatively inexpensive to do for everyone.
Clutter-Free
Most of us already have wayyyyy too much stuff. We really don’t need any more. And I for one don’t love having to find a place for a bunch of new trinkets every Christmas. Cookies are great because the only space they take up in the space in your tummy when you enjoy them.
Thoughtful
Can anyone claim that it isn’t thoughtful to give someone something homemade?
No. I mean they can, but that’s kind of rude.
Taking the time to create something special for someone else is always thoughtful. And nothing is more thoughtful than receiving freshly baked cookies.
Remember, food brings us together. Giving food is a sign of love. Food is delicious – especially in the form of cookies. I can’t think of a simpler, more thoughtful gift than that.
Special
Okay, not every cookie is special. I mean, they’re all tasty, but that doesn’t necessarily mean special.
But these white chocolate macadamia nut cookies are definitely special. Most of us don’t bake these cookies throughout the year because macadamia nuts are a little on the pricey side and the rich buttery cookie is just a bit too much when it’s 10 million degrees outside.
But a good white chocolate macadamia nut cookie will always feel gourmet, a little exotic, and extra fancy. Wrapping these cookies up in a cute little package will make anyone’s day, that’s for sure.

Now that we’ve established why you should give these white chocolate macadamia nut cookies to everyone for Christmas, let’s talk how to make these perfectly.
Don’t Skip the Cornstarch
Cornstarch helps ‘soften’ the gluten which in turn keeps your cookies softer much longer.
Without cornstarch you might end up with a crunchier cookie rather than a cookie with a little bit of crunch on the edges and a deliciously soft and chew inside.
SO DON’T SKIP IT!
Use Quality Ingredients
I highly recommend using good quality chocolate or at least semi-good quality chocolate.
If you’re giving as a gift, it’s better to make your treats a little extra fancy, right?
I suggest using Ghirardelli white chocolate chips because they’re a tastier chip while still being affordable enough for us normal people.
Chill Your Dough
Sadly, this is not a dough you should throw straight into the oven. You will end up with a puddly, burnt mess.
Chilling your dough will not only create the perfect texture but also make the flavor even better.
I suggest chilling the dough for about an hour and then rolling into balls.
Freezing this Dough
The great thing too about these cookies is how easy it is to prep them ahead of time. Prep the dough and roll them into cookie balls and put them in some of these compostable (yeah, compostable) freezer safe Ziploc bags then stick them in the freezer!
Okay, but for real, these freezer bags are amazing. I’ve been looking for literally years to find freezer safe, eco-friendly bags and friends, I finally did!
So make sure you get some so that you can bake the world a sweeter place without being trashy about it.
They’ll be good for up to 3 or 4 months in there which means there’ll be less stress around Christmas baking if you already have the dough in your freezer!
(Allow to warm up to slightly cooler than room temperature before baking frozen dough).

Soft and Chewy White Chocolate Macadamia Nut Cookies
Ingredients
- ¾ cup butter
- 1¼ cup brown sugar packed
- ¼ cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg
- 2½ cups flour 300g
- 2 tsp corn starch
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup white chocolate chips
- ½ cup chopped macadamia nuts
Instructions
- In a large mixing bowl, use an electric hand mixer to cream together your butter and sugars until light and fluffy (about 4 minutes), scraping the sides of the bowl with a spatula as needed.
- Beat in your egg and vanilla until just combined.
- In a separate bowl, whisk the dry ingredients together. Slowly add the dry ingredients to the wet mixing until just combined. Fold in your chocolate and macadamia nuts.
- Cover with one of these reusable bowl covers, and chill for at least one hour (and up to 4 hours).
- Remove dough from fridge and allow to warm up a bit on the counter for about 10 minutes. Preheat your oven to 325°F/165°C and line 2 baking sheets with silicone baking mats.
- Use a 1.5 tbsp cookie scoop to scoop your dough onto your baking sheets, leaving an inch between each. Bake for 8-10 minutes until your edges are just starting to turn golden brown. The cookies may not look done, but residual heat will continue to bake these. DO NOT overbake.
