Gingerbreadmen Christmas Rice Krispie Treats Tips
Spray your cookie cutter with non-stick spray. It covers more smoothly than butter and will prevent ripping off the arms and legs of the poor gingerbread men.
Prepare your treats on parchment paper or a silicone baking mat. You’ll want an easy way to move these Christmas Rice Krispie Treats around.
Use some cute paper straws to turn these treats into lollipops. While the treats are still warm, take one of these eco-friendly paper straws and push them through the bottoms of the Rice Krispie Treats.

Helpful Tools for Christmas Rice Krispie Treats
Duh. It’s kinda hard to make these without a cutter. If you don’t have one, get yourself this set I use which is fun because you can make different sizes for “portion control”.
Plus if you make these with kids, trust me when I say that they love making little families of different sizes.
(Full disclosure: I also enjoy this because I will always be a child at heart).
Save the planet while you bake beautiful things. Keep the world sweet. If you don’t want to use parchment paper to prep these on, you can OF COURSE use a silicone baking sheet.
And then pat yourself on the back for being a friend to nature.
Non-stick spray will be MUCH easier than using butter. You need to make sure all the crevices of your cookie cutters are well covered and this is much easier with spray.
If you don’t have non-stick spray, you should consider getting yourself a refillable can to use. You can put any oil in there and it does the work of any of those fancy name brands.
Plus, if you bake a lot, cook a lot, or simply eat a lot (and honestly, why wouldn’t you do all three a lot? It’s like the holy trinity of a fulfilling life) one of these cans actually saves you quite a bit of money over time!
These of course are much more eco-friendly than using plastic bags or disposable piping bags. So make sure you place that freshly melted chocolate in some reusable bags that again will help keep trash out of the ocean.

A thin piping tip makes pretty lines and trust me when I say that you’ll probably use it all the time. It’s probably one of the most handy tips there is.
Okay, let’s be honest, if you’re making these with kids or if you’re ballin’ on a budget and are making these for yourself, you can stick with cheaper chocolate…
Kids are messy and a disaster in a kitchen so I don’t like using the expensive chocolate.
Sorry, but I don’t like watching quality chocolate get smashed into the floor or end up on the ceiling.
HOWEVER! I still don’t recommend using candy melts because frankly, they’re awful.
But if you are making these as a gift (especially if these are a gift to yourself) do yourself a favor and go a little luxurious! Ghirardelli melting wafers melt easily and don’t taste like trash. It’s a win win.

Gingerbreadman Rice Krispie Treats
- 6 cups cocoa pebbles
- ¼ cup unsalted butter
- 8 oz mini marshmallows
- red + green M&Ms
- ¼ cup Melted white chocolate
- Royal Icing Eyeball Sprinkles
- Lay out a piece of recycled parchment paper on a clean counter. Spray a large gingerbread man cookie cutter with some non-stick spray and set aside.
- In a medium saucepan, melt your butter over medium heat. Mix in your marshmallows and mix until smooth.
- In a large mixing bowl, combine your Cocoa Pebbles and melted marshmallows mixing with a silicone spatula until well incorporated.
- Take a scoop of the Cocoa Pebble mixture and press it firmly into the cookie cutter. Really compact it to avoid a crumbly mess when you remove it. If there are holes in the man or the cereal is not level, add more until you have an even, compacted little dude.
- Gently push your Rice Krispie Treat out of the cookie cutter and set aside. Repeat with all of the cereal.
- Once you have your gingerbread men. Allow to cool fully. (About an hour)
- Allow the chocolate to harden and share! Store any extras in an airtight container
