Happy Earth Day b*tches!! Is anyone else excited for it?
Earth day is by far the most important and underappreciated day of the entire year. Ya know why? Because we require the earth to…well…live. So we should be celebrating Earth day, like every damn day.

Other ways that you can celebrate Earth Day
Turn your food scraps into glorious recipes
Regrow your food scraps like celery, onions, garlic, even potatoes can easily be regrown from your scraps. Simple Bites has great tips to get you started regrowing your produce
And for the food scraps you can’t necessarily regrow, try to reuse. For example, check out these Candied Citrus Peels to reduce food waste and make a tasty candy. They also make an awesome gift.
Grow a garden.
Girl, I don’t care if all you have is a few dusty pots and no patio. Plants are good. Indoor gardens, outdoor gardens, they’re all perfect.
So plant some herbs, some potted plants, flowers, whatever. Just plant something beautiful.
Upcycle some trash into gifts
Upcycling is good. It keeps more trash from ending up in landfills and truly improves the quality of the environment and your community.
Upcycling doesn’t have to be tacky or lame. (I know, we all think of that when it comes to upcycles – for real, I’m so tired of seeing people use old toilets as garden planter…I wish I was making that up).
Don’t believe it’s possible? It is. Turn your empty toilet paper rolls into beautiful gift boxes for candies, jewelry, and other cute little gifts.

Easy Cake Mix Earth Day Cookies
You can use literally any brand of yellow cake mix. I prefer using the generic grocery store version because, frankly, I’m cheap.
I used Chef Master Leaf Green and Royal Blue gel food coloring. I really do love these dyes because of their vibrant colors that don’t disappear when baking (side note, their black is actually black rather than that weird chalky grey that you get sometimes). I highly recommend them!
Get their starter gel coloring kit!
Finally, as you roll your cookies together to produce the marbled effect, the cookies will seem super oily. Don’t freak! This goes away after they bake. Just don’t add more than oil than the recipe calls for!
Earth Day Cake Mix Cookies
- 1 box Yellow Cake Mix
- 2 Large Eggs
- ⅓ cup Olive Oil
- 2 drops leaf green gel food coloring
- 2 drops royal blue gel food coloring
- Preheat your oven to 350°F and line a cookie sheet in your eco friendly silicone baking mat.
- Mix together the cake mix, oil, and eggs until a well combined. The dough will be soft.
- Divide the dough in half into two separate bowls.
- Add 2-4 drops of green food gel coloring to one bowl and 2-4 drops of blue gel food coloring to the other. Mix until the color is evenly distributed throughout the dough.
- Chill your dough for 20-60 minutes. This will prevent your cookies from getting super flat as they cool, giving you a much fluffier, prettier cookie. DON'T SKIP THIS STEP.
- Take a half tablespoon of each color and roll them together. Place the cookie balls on your baking sheet about 1 inch apart.
- Bake for 9-11 minutes. Allow them to cool for 10 minutes on the baking sheet before transferring them to a wire cooling rack to finish cooling.
- Store any extras in an air tight container.
Celebrate Earth day the same way you’d celebrate anything else….with delicious treats, maybe a themed activity, and with everyone that you love.
